An embarrasingly long time ago (around post 10) I mentioned this Yam Puff recipe which I had finally gotten from my mom. A number of people asked for the recipe, but unfortunately I was AWOL from TT to finish my degree. So here it is:

Yam Puff
4 large yams (or sweet potatoes)
1/4 cup butter
2 well-beaten eggs
1/3 cup sugar
2 teaspoons baking powder
1 teaspoon salt

Peel potatoes/yams and boil until soft. Mash and add the remaining ingredients. Beat well and put in buttered casserole. Sprinkle with cinnamon, dot with butter and bake until brown, about 1/2 hour or more.
