I wanna be consequence-free
I think it was in Questions for the Cook that I said I'd post my mother marinated artichoke/mushroom/onion recipe. I'll put it here and point people to it:
Marinated Mushrooms and Artichokes
Serve individually on plates as a first course, or spear with wooden picks from a serving dish
1/2 cup tarragon
or red wine vinegar
1/4 cup oil
1/4 cup chopped parsley
2 tsp. salt
1/2 tsp. thyme
1/2 tsp. oregano
1/4 tsp. pepper
1 clove of garlic, minced fine
1 pound large
mushrooms, sliced (or use whole, tiny ones)
1 8-ounce can of artichoke hearts, drained and quartered
1 medium red onion, sliced
In a large bowl,
mix together the first set of ingredients for the marinade, then mix in the
mushrooms, artichokes and onion. Marinate, covered in fridge, for 24 hours,
stirring occasionally. Drain well. Serves 8-10.
