Tomato Pie with Polenta Crust
Who was it who had the tomato pie dream? I'm thinking you'd just need to make a polenta crust--i.e., boil the polenta according to instructions and smear it in the bottom of a pie pan, brush the top with a little olive oil, toast it briefly in a 350-ish oven. Then sauté some onions and add a big can of diced tomatoes (or fresh, seeded, peeled ones) and some chopped garlic; cook 'em down until they're starting to thicken and get less juicy. Season with salt and pepper and either basil or crushed red pepper or both, or maybe thyme a la provencal. Then pour it in the crust and bake to meld, with or without a) calamata olives and/or b) cheese of some kind--romano, blue cheese, gruyere. Brush the top with olive oil, and take the pie out when it starts bubbling.
