Clotted cream is what the gods eat when they're feeling low. It's best served on fresh scones with strawberry jam.

It's made from very high fat cream (at least 35%, higher if you can get it). Warm the cream in a double boiler to 190 degrees F. Do not boil!!! Not even a little.

Hold at 190 F for one hour, then cool by immersing the top part of your boiler in ice. Store covered in the refrigerator overnight, and make some scones. Drooo-oool.
