I'll share for all:
Irish Soda Bread
Preheat oven to 375.
3 cups all-purpose
flour
2 cups whole-wheat flour
2 teaspoons baking soda
1 tablespoon baking powder
2 tablespoons brown sugar
2 1/4 cups buttermilk
Mix all dry ingredients
very well (I toss 'em in a bowl and use a 14" whisk). Add buttermilk and
stir to make a soft dough. Dump out on counter and knead to make it all come
together. Divide into two, shape into round loaves, flattening them onto a baking
sheet lined with silicone paper (or a non-stick sheet).Do not use a greased
sheet! Cut an 'X' in the top of the loaves, and let them rest for 10 minutes.
Bake on middle rack for 40 minutes, and cool on racks.
