Grilled Marinated Salmon
If it's Salmon
or Halibut, then grilling is the best way. A simple marinade of lime juice,
sesame oil, ginger, garlic and a little chili oil. Grill until it is just cooked,
or even better, just under cooked. One other excellent way to do salmon... make
a paste (in the blender) of sundried tomatoes, garlic, olive oil and parsley.
Make a few slits in a side of salmon and spread the paste in these slits and
over the whole side. Cook skin side down (use foil under the skin, it's a little
less messy) for about 15 to 20 minutes on medium heat and serve. It is also
great chilled and served on a buffet.
