There's a great recipe for flatbread pizza dough in October Martha. Incredibly simple and tasty:

Flatbread Pizza Dough

3/4 c. warm water, sprinkle with a packet of dry active yeast and wait for it to foam. Add 2 c. flour, 1/2 tsp salt, 1/8 tsp. pepper. Knead until it's smooth and elastic. (Cover with plastic while you get your toppings chopped and ready.) Cut into three parts.

Roll one out into a rectangularish oval and put whatever you want on it. I've been using mostly grilled chicken, tomatoes, basil, light sprinkle of shredded asiago and mozzarella, chevre crumbles, toasted pine nuts and some edible flowers. Bake at 400 for about 10 minutes, until the edges are good and brown. Mmm. Mmm. Good.

Warning, though: If you cover the crust with a solid layer of cheese, it will never bake in the middle. I'd suggest baking it part way, then adding the toppings and baking the rest of the way.
