Choco and anyone else who needs to know what to do with a box of persimmons; Here's my great great grandma's persimmon pudding recipe. It'll take care of one or two of them anyway.

Persimmon Pudding

2 tablespoons butter
1/2 cup sugar
1/2 cup peeled, mashed persimmon
1/2 teaspoon vanilla
1/2 cup milk
1 cup flour
1/2 teaspoon salt
1 teaspoon soda
1/2 teaspoon cinnamon (my mom actually adds 1 teaspoon, but orig calls for 1/2...use your own taste to guide you.)
1 cup raisins
1/2 cup chopped walnuts
2 T chopped citron

Mix persimmon and vanilla to creamed butter and sugar. Add alternately, sifted dry ingredients and milk to persimmon mixture. Stir in raisins nuts and citron. Steam 1-1/2 hours in oiled mold. My mom does it in the top of her double boiler without a mold. Just right in the top pan. Turn onto serving dish. She then serves with a lemon sauce, but she couldn't find that recipe quickly. I'm sure that wouldn't be too hard to find or improvise. I remember her serving it with hard sauce too.

She also suggested you could substitute persimmions for the bananas in any banana bread recipe.
