My mom's potato salad:
Steam, cool, peel
and slice numerous baby red spuds. Slice lots of onion on top of them. Toss.
Combine 3/4 c. cider vinegar, 3/4 c. oil, 1/2 c. sugar, 1 tsp. salt, 1 minced
clove garlic, 1/4 tsp. pepper, 1/4 tsp. dried oregano and 1/4 tsp. dried thyme.
Marinate the potatoes and onions in this mixture, at least overnight, the longer,
the better. Before serving, drain off the excess marinade. Mix in diced celery,
chopped hard-boiled eggs, and Hellman's mayonnaise.
