Hand Patted
Biscuits
As adapted by catylaine from Joy
Makes about 7 - 2 O inch biscuits.
Preheat oven to 450 F.
Sift together twice: 1 æ cup all purpose flour or White Lily , O t salt, 1 T double acting baking powder, 3 T Saco Cultured Buttermilk Blend
Cut 5 T chilled & sliced butter into dry ingredients with two crisscrossed knives until butter chunks are the size of peas.
Add: æ cup milk Stir until dough is fairly free from sides of bowl. Turn out on moderately floured surface. Knead & fold about eight to ten times. Pat dough into a thickness of about an inch. Cut with 2 O biscuit cutter. (A Pat OíBrianís highball glass is perfect. This must be stolen from the main bar as they are not sold.) Press to cut; do not twist.
Place biscuits close together on a canola oil Misto'd cookie sheet. (Brush biscuit tops with milk or butter.) Allow biscuits to rest 30 minutes or more.
Bake 7-12 minutes until tops are a deep golden brown.
Pig out with Mayhaw
jelly, Lemon Marmalade, Meyer Lemon Curd & Marionberry Fruit Perfect!
