Squid Pasta with Red Pepper Sauce
Simple soosh: sauté onions, garlic, red pepper in quite a lot of butter till softened, chuck in chopped tomatoes, red pepper flakes, chopped cleaned squid, white wine and lemon juice. Sprig of thyme optional. Simmer uncovered for at least an hour, until the squid goes through the process of vulcanising and back out the other side to al dente tenderness.
Toss with cooked
pasta, lots of cracked black pepper and serve with crisp white wine.
