this sounds good:

Crabmeat Salad

• 1/2 cup mayonnaise
• 1 tsp. cider vinegar
• 1 Tbs. Creole mustard
• 1 Tbs. buttermilk
• 1 green onion, very finely chopped (leave out the toughest part of the top and bottom)
• 2 sprigs flat-leaf parsley leaves, chopped
• 1/2 tsp. dill
• 1/8 tsp. tarragon
• 1 shake white pepper
• 1/8 tsp. salt
• 1 dash Tabasco
• 1 Tbs. small capers
• 1 lbs. jumbo lump crabmeat (or white crabmeat, if that's all that's available)

  1. Combine all ingredients except crabmeat and mix with a wire whisk.

  2. Add the crabmeat and very carefully toss with the sauce. It's best if you let it sit for an hour or two before serving.
