Peach Salad with Peppery Greens

Ooh, Helen, my fave peach recipe: get a bunch of mint, some sugar and balsamic vinegar and purée. Then skin some peaches, throw them in the bowl with the dressing and let the whole thing sit in the fridge for a few hours or overnight.

Toast some almonds. Toss everything together with peppery greens, and serve with a big slice of brie and some crusty bread. Every time I make this people go nuts--the best thing is it's like 10 minutes of effort.
