Elizabeth, what other than perfectly ripe avocados would you use to make guac for a party? You couldn't possibly make guac out of unripe avocados. I don't understand.

Avocado butter
1/2 cup butter, softened
1/2 cup mashed ripe avocado
5 Tablespons fresh lemon juice
2 tablespoons minced fresh parsley
2 cloves garlic, minced
salt to taste

beat it all up together, season, cover and refrigerate.

Good on grilled swordfish, smeared on bread, and in any number of other creative applications.

Avocado butter is so good, it almost makes me believe there is a god.
