It's so hot I had to go buy gin.
Well, there are enough close versions of this online that I don't feel guilty for giving away the secret family recipe. Makes one deep dish or two regular pies - handy if you want it to go a long way at a party.
VIDALIA ONION PIE
4 medium Vidalia
onions, skinned and thinly sliced
1 stick butter or margarine
3 eggs, beaten
1 cup sour cream
1/2 t salt, or to taste
1/2 t freshly ground black pepper, or to taste
several dashes Tabasco
thyme, use fresh if you have it, to taste
grated Parmesan cheese
In a large skillet,
sauté the onions in butter or margarine. Combine the eggs and sour cream
until smooth and add to the onion mixture. Add the seasonings and pour into
pie shell. Then sprinkle with cheese. Bake at 450°F for 20 minutes, then
at 325°F for 20 more minutes.
