Warm Wasabi Noodles with Grilled Pork

From: The House Restaurant in SF via The Secrets of Success Cookbook
Pork:
1 pound pork loin, sliced into 1/4-inch-thick slices
1 1/2 tblsps minced garlic
2 tsps dark soy sauce
1 tsp crushed red pepper flakes
1 tblsp minced fresh parsley
Freshly ground black pepper
Noodles:
1 pound fresh wheat noodles, udon or Shanghai style
2 tblsps peanut oil
2 tblsps minced garlic
2 tblsps dark soy sauce
1 tblsp light soy sauce
2 tsps oyster sauce
1 tsp sugar
pinch of salt
4 tsps wasabi paste
1 tblsp Asian sesame oil
1 1/2 cups peeled, seeded julienned cucumbers
julienned green onions
sesame seeds

For the pork: Combine the pork with the garlic, soy sauce, red pepper and parley in a large bowl. Sprinkle with black pepper to taste. Cover and refrigerate for 20 minutes

For the noodles: Cook the noodles in a large pot of boiling water until tender, about 2 minutes. Drain and set aside. Preheat the grill (medium-high heat). Add 1 tablespoon of peanut oil to the marinating pork, then lift the pork from the marinade. Grill until cooked through, about 2 3 minutes per side. Transfer to a platter and cover loosely with foil to keep warm. Heat the remaining 1 tablespoon peanut oil in a large wok set over high heat. Add the garlic and stir 10 seconds. Add the cooked noodles, soy sauces, oyster sauce, sugar and salt. Stir quickly to combine. Remove from the heat. Mix the wasabi and sesame oil in a warm bowl to blend. Add to the hot noodles, toss to coat. Transfer the noodles to a platter and cool until just warm

Arrange the cucumbers over the top of the warm noodles. Fan the pork over the cucumbers. Garnish with green onions and sesame seeds and serve.

Serves four.
